Fillet is a project by passionate steak enthusiasts who opened their first restaurant in Bukhara and brought their second to Tashkent. Meat is sourced from their own farm in Bukhara and fermented on-site—a quality evident in every cut. The menu features ribeye, beef steak assortments, truffle-roasted potatoes, and signature sauces including chimichurri. Desserts deserve special mention: dulce de leche fondant, crème brûlée, and apple pie. The restaurant offers a curated selection of local Uzbek wines. The interior is calm and minimalist with an inner courtyard. Ideal for business dinners or romantic evenings, with attentive yet unobtrusive service.
